Bikini Recipe

Makes enough for 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Combine the listed components into a pan, bring to a gentle boil, mixing to dissolve. Then, take off the heat allowing it to cool fully. Decant to a sterilised bottle, cap it and store in the refrigerator, where it will keep for up to four weeks.

To make Premix: Combine the specified spirits and syrup into a big jug, allow it to infuse for one hour, then filter it preferably using muslin, making it fully clarified.

For serving: Add 85ml of the premix into a mixing glass packed with ice, gently stirring carefully for about 60 seconds until cold. Filter to a frosted cocktail glass or equivalent, top with a few cranberries and finish by giving it a light spray of the essential oil over the drink.
